Ingredients:
- 1 cup red or regular quinoa, whichever you like best
- 1 ripe mango
- 1 red bell pepper
- 4 green onions
- 1 can black beans
- 1 lime (or 1 tablespoon of lime juice)
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
Instructions:
1. Bring 2 cups of water to a boil and add quinoa. Reduce to a low heat, cover, and cook for 15 minutes.
2. While the quinoa is cooking, cut the green onion, bell peppers and mango into small pieces. (note: if you have never chopped mango before, you might want to Google it! It can be pretty tricky and messy if you haven't done it before). Put everything into a large bowl.
3. Rinse the black beans.
4. Combine cooked quinoa, black beans, and chopped fruit and vegetables in the large bowl.
5. Juice the lime until you have at least 1 tablespoon of liquid.
In a separate bowl, mix together the vinegar, olive oil, and lime.
6. Pour the mixture over the top and mix with other ingredients thoroughly!
7. Serve & enjoy!
