Sassy Snack: Açaí Bowl

with banana, strawberries, blueberries, slivered almonds,
and honey drizzle 
refreshing & full of antioxidants, amino acids, and vitamins!

prep time: 10 minutes
cook time: 5 minutes

ingredients:
- 2 frozen acai puree packages (can be found at Whole Foods)
- 1/2 cup frozen berry medley
- 2(+) tablespoons vanilla yogurt
- suggested fruits & toppings:
       banana
       blueberries
       strawberries
       kiwi
       blackberries
       raspberries
       almonds
       granola
       shredded coconut
      honey

instructions:
1. in a blender combine the acai puree, frozen berries, and vanilla yogurt. pulse the mixture until it reaches the consistency of a frozen yogurt (note: the mixture will be pretty thick! if your blender can't handle the thickness, add more vanilla yogurt)
2. split the mixture into two bowl and place on a level surface in the freezer
3. wash & slice all fruit
4. top & taste!

Sassy Snack: Mango Quinoa Salad


can be served as a main dish or as a side with fish or poultry

served with sliced lime
Serves: 4
Prep time: 15 minutes
Cook time: 15 minutes

Ingredients: 
- 1 cup red or regular quinoa, whichever you like best
- 1 ripe mango
- 1 red bell pepper
- 4 green onions 
- 1 can black beans

- 1 lime (or 1 tablespoon of lime juice)
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar 

Instructions:
1. Bring 2 cups of water to a boil and add quinoa. Reduce to a low heat, cover, and cook for 15 minutes.
2. While the quinoa is cooking, cut the green onion, bell peppers and mango into small pieces. (note: if you have never chopped mango before, you might want to Google it! It can be pretty tricky and messy if you haven't done it before). Put everything into a large bowl.
3. Rinse the black beans.
4. Combine cooked quinoa, black beans, and chopped fruit and vegetables in the large bowl.
5. Juice the lime until you have at least 1 tablespoon of liquid. 
In a separate bowl, mix together the vinegar, olive oil, and lime.
6. Pour the mixture over the top and mix with other ingredients thoroughly! 
7. Serve & enjoy!
